Amarone Natural Mossto
With this processing method, ripe coffee cherries undergo anaerobic fermentation in the cherry skin and mossto (juice from the coffee cherries), along with local yeast and local lactic acid bacteria. Once PH levels reach between 3.5-4.0, the coffee cherry is moved to outdoor drying racks to be sun-dried, finally its moved to a temperature controlled drying station for a slow dry.
