Brazil Fazenda Cachoeira Lot508

A unique naturally fermented single estate Brazil coffee... juicy peaches up front with a creamy raspberry finish. Nutty with a black forest gateaux nose.

Five of the Barbosa family visited the Dusty Ape roastery and having had a direct relationship with the coffee producers really gives this coffee a family vibe. As evident from their coffee, so much pride, joy and love oozes from this fourth generation producer.

This hand picked Yellow Catuai scores SCA 87.75 - a high scoring Brazils is the norm for the Barbosa family. There is and always has been a big focus on the environment and sustainability with the family currently looking to produce a 100% sustainable coffee alongside their 186 hectares of nature reserve!

This single estate coffee comes from the Minas Gerais region in the southeast of Brazil, which has some of the highest mountain in the country. It is grown at an altitude of 1100m.

The Barbosa family has been producing coffee for four generations, now across two farms, DBarbosa and Cachoeira. Cachoeira is Portuguese for ‘waterfall’ and located along the Paraguaçu River.

When the cherries reach full maturity they are hand picked, placed into bags and left to rest and ferment in their own juice under the shade of the trees for two days. After this, with their skin still on, they are taken to dry and rest for a further twenty days, ‘African style’. During the drying process the cherries are placed on suspended, raised beds, which allows air to flow between the beans and the drying is more uniform. The beans are shuffled and turned every one to two hours depending on the temperature that day.
