Colombia Cafe Granja La Esperanza Sweet Valley

Café Granja La Esperanza are well known for producing competition winning coffees. It all began in 1930 when Israel Correa and Carmen Rosa Vega arrived in Valle del Cauca, seeking unoccupied land to start a farm and acquired Potosi. The entire farm has been organic since the lates 90's.

They have spent many years experimenting with hybridization to bring disease resistance traits into speciality coffees with great flavour profiles. This also involved developing specific processing methods matched to the  varietal, since each coffee type will respond in different ways. This is especially true with natural coffees like this one where the fermentation temperature and time have to be carefully controlled.

This Sweet Valley coffee is a natural-processed 'Colombia' varietal - a hybrid of Caturra and Hybrido de Timor. It has an incredible dry aroma, pleasing acidity and white chocolate, blueberry and candy floss notes.

In the Colombian municipality of Caicedonia, Potosoí farm has 10 lots and 188,725 trees spread over 52 hectares. Temperature ranges from 17°C-22°C at an altitude of 1400 to 1860 meters above sea level. The humidity is 73% with an annual rainfall of 1340 mm/year.

This natural Colombia lands at a time when fresh crop fruity coffees are harder to come by. The cherry is fermented for 15 hours at a controlled temperature before being moved to a dehumidifier for another 72 hours (or so) until fully dried. It is then dehulled and bagged for export.
