Guatemala Los Suspiros

Los Suspiros is a collaboration between childhood friends Axel Palacios and Fredy Morales. When Fredy went to university, Axel started working on his grandfather's farm. When Fredy returned he started work at his father's farm. Now Axel grows and picks the coffee, and Fredy and his brother process the cherries.

The farm is in the town of San Gaspar Ixchil, Huehuetenango. The region is  affectionately known as "Huehue" (pronounced whe-whe), the highest and driest and most remote part of Guatemala, producing some of the finest coffees in the country.

The coffee is a washed Bourbon and Caturra mix.

This is a full-bodied cup with a maple syrup sweetness. There's an underlying milk chocolate flavour and texture with a crisp green apple acidity.

1,500 - 2,000 meters above sea level but with easy access to water thanks to an average rainfall of 1,200 - 1,400 mm and a steamy 70-80% humidity. The temperature is a steady 20-24°C. Limestone soils -- perfect coffee rowing conditions -- no wonder Heuheutenango grows some of the best coffee in Guatemala.

Freshly picked cherries arrive to the Rosma mill. The
coffee is poured into a syphon to let the floaters rise. The
cherries are moved into fermentation tanks where the
process takes 30-40 hours of fermentation during cloudy
times. February it’s the most cloudy time. During sun:
24-30. When the cherries reach it’s optimal fermentation
point they are moved to patios or the green house.

Some are processed in Finca Rosma, but
when Rosma is full, they use a friend's beneficio. Sifon,
pulp, do an extra step, submerge the recently pulped
coffee to remove the floaters. Water is immediately
drained, and then the coffee is moved to raised beds for
the first 2 days, for the sorters to remove primary defects
and to drain the water. After the third day, the coffee
moves to the green house. Depending on the sun, it will dry
between 18-20 days.
