La Esperanza Farm is located in Trujillo, Valle del Cauca. The crop area is 2,884 hectares, comprising of Columbia and Caturra varietals growing at an elevation of 1750 - 1800 metres above sea level.
The cherries are picked at the precise level of ripeness to increase sugar level.
The cherries are then de-pulped without water to remove the fruit and then fermented for 19 to 22 hours to remove the mucilage.
After being fully washed, the final step is a mechanical drying process where the temperature is closely monitored between 35-45ºC to reach a final humidity of 10.5% - perfect for preserving the green coffee before roasting.
